Recipe post!!!

I love, love, love the magazine Cooking Light.  The recipes have flavor, variety and less fat and calories than the usual preparation.  Let's face it, we ALL worry about what we put in our bodies and everyone hits that point in life when they need to be mindful of what they eat. 

I had to cancel my subscription part of cutting back to just the neccesities but I do have the Complete Cooking Light Cookbook from 2006.  And I.Love.It.  There are great basics, exotic recipes, and stuff even my kids will eat. 

I try to make most of the kids' treats to reduce the amount of preservatives and artificial ingredients in their diet, so I have been on a cookie/bar cookie kick.  I have been meaning to make these cookies for ages, finally made them last night, and WOW.  They were so good!

Double-Chocolate Cookies
1 1/4 C. all-purpose flour
1/2 t. baking powder
1/4 t.salt
5 T. butter, softened
1/2 sugar
1/2 brown sugar
1 1/2 t. vanilla extract
1 large egg white
1/3 C. dried cherries (I used dried cranberries "infused" with cherry juice, tasted great)
1/4 C. semisweet chips
2 1/2 T. white chocolate chips ( I don't like white chocolate. It's not chocolate.  I used milk chocolate chips instead)

Preheat oven to 350 F.  Combine flour, baking powder, and salt, stirring to combine.  Combine butter and sugars; beat until well-blended (I love my trusty Kitchen-Aid).  Add vanilla and egg white, beat 1 minute.  Stir in flour mixture, cherries, and chocolate chips.
Drop by tablespoons 2 inches apart onto baking sheets coated with cooking spray.  Place pans in freezer 5 minutes ( this helps the cookies hold their shape in the oven).  Bake 10 minutes or until lightly browned.  Cool on pans for 2 minutes ( my friend's mom did this years ago and it keeps the center chewy but the outside crisp).  Remove from pans; cool on wire racks. 
Makes about 2 doz. depending on how big you like your cookies.  There are 98 calories per cookie.

These cookies were so good; I made a batch while the quiche was in the oven and we had eaten all but six by the time we went to bed.  I'm making more today!!  Enjoy.

Moving Day

Well, here we are..in our new digs....

After getting hacked and suffering through the endless recovery loop, I gave up.  I'm nowhere savvy enough to navigate the ambiguous instructions, so I just got a new email account and new blog.

I'll be "unpacking a few boxes," so to speak for the new few days.  I have to get some things organized during the next few weeks, and clean up a few things before I have surgery in a month.
